Easy Pan Pie Bars with Sugar Cookie Crust

2020 hasn’t brought many wins this year. Well, folks, I think I found a winner for how to make pie!

I made this pie this year for Thanksgiving. But hell, I want to eat pie all year long! Let’s do it.

If you know me personally, you know that I currently have a 2 month old newborn. So that means my meals & baking have to be quick, easy, and pretty stupid-proof. This pan pie checks all of those boxes!

First, I set the oven to 350 degrees. While waiting, I sprayed my 2 quart glass pan with baking PAM.

For the crust, I used 1 pack of sugar cookie Pillsbury cookie dough. I gently smushed the cookie dough into the bottom of the pan, with a small lip up the side. The key here is to make the dough crust VERY thin. Seriously. Thinner than you think. Whatever you’re thinking of as thin, make it even thinner.

Once the oven is ready, pop the pan in. I originally set my timer for 7 minutes, but it wasn’t quite ready yet. I took the pan out when the cookie started to get a little golden along the edges.

So now the cookie crust is a little golden & A LOT thicker than you expected it to get, right? If you like a thicker crust, or if your pan is deep, or you listened to me and made your crust REALLY thin, then it’ll be delicious as is. But if you’re like me and did not make your crust super duper thin (I didn’t take my own advice) then you’ll want to pat that crust down to a reasonable size. I took a paper towel and gently pushed down on the crust a the bottom of the pan, careful not to disrupt the lip of crust along the side.

You’ll notice the crust isn’t completely cooked- this is perfect! Because now you’ll add your pie filling (mine was pumpkin) to finish cooking. I added my filling & cooked until it was set. Sorry, I don’t have advice about your specific pie filling because I just followed the direction on the Libby’s canned pumpkin can. :)

The possibilities are endless! These cut into perfect pie bars & now we have pie for DAYS! It’s not too sweet & doesn’t crumble. You’ll notice that it gets tastier as time goes on too! Next, I want to try apple pie filling.
